Instructions
Step 1
Oven 475, rack in middle. Slice potatoes ¼" thick. Slice scallion greens thin and mince whites, keeping them separate. Crumble feta.
Step 2
Toss potatoes with 2 Tbsp oil, ¼ tsp salt, and ¼ tsp pepper. Arrange on a parchment lined baking sheet. Roast until spotty brown and tender, 15-20 min. Sprinkle with scallion greens and feta and bake until cheese is just melted, about 5 min.
Step 3
Cut steak into 2 inch pieces. Pat dry and season. Heat 1 Tbsp oil in 12 inch skillet and cook to desired doneness.
Step 4
Whisk vinegar, mustard, and minced scallion whites in a lg. bowl. Slowly whisk in 3 Tbsp oil until incorporated.
Step 5
Trim radishes and slice thin. Chop 2 Tbsp mint. Add radishes, mint, and mesclun to the lg. bowl with dressing. Toss and season to taste. Serve salad, steak, and potatoes separately.
