Step 1
Toast the pumpkin seeds and almonds in a dry frying pan with a pinch of salt for a few minutes until you can smell them and hear the pumpkin seeds pop. Leave too cool slightly whilst you make the dressing.
Step 2
Simply whizz the juice of 1/2 orange, a little mustard, vinegar, olive oil, salt and pepper. Taste and adjust to your preference. Feel free to add a little honey if you like it sweeter. Mix in a finely diced shallot to create a vinaigrette. The dressing will be quite loose, don't panic.
Step 3
Roughly chop the almonds. Dice the cucumber, tomatoes, parsley and mint. Mix with precooked quinoa, a crumble of goats cheese and the toasted nut mix. Drizzle in 1 - 2 tbsp of the dressing and dive in.
