Please keep in mind, we have to place sweet rice sticks in cold cooking oil first before we turn on the heat to low heat during the process of deep frying. This is only way to get rice sticks crunchy and crispy.

Instructions
Step 1
Mix water, sugar and malt sugar in a sauce pan, stir constantly. Bring to boil and remove from the heat.
Step 2
Pour the mixture into 100g sweet rice four to mix, stir well and add additional sweet rice flour (85g) to knead until it becomes smooth and soft dough.
Step 3
Roll out the dough into a flat and square pancake with a rolling pin; slice the pancake into multiple long and thin strips. Roll out each long strip into a round strip, and cut it into 3-5 cm across small sticks.
Step 4
Pour adequate amount of cooking oil in a pot, and place sweet rice sticks one by one in the oil (please work with small batch to avoid sticks from sticking). Simply start the heat on low and slowly fry sticks on low until they turn golden brown.
Step 5
For coating, pour water and sugar in a sauce pan, stir and bring to boil. Simply shut off the heat once it melts and bubbles. Mix deep fried sweet rice sticks with sauce until melted sugar becomes solid and all sticks are coated with solid sugar.
Step 6
Eat warm or let it sit for hours to cool down and serve cold.
