Instructions
Step 1
wash and peel outside of veg than coarsely grate in long strokes
Step 2
toss with and lace in a clean tea towel or cheese cloth ringing out excess liquid from veggies
Step 3
in a 30cm non stick fry pan add oil and sprinkle veg evenly to the pan
Step 4
pat the veg down and place pan on a medium high heat and cook for around five minutes until crisp and golden, flip and cook for another 3 minutes
Step 5
while veg is cooking place the prosciutto on top pressing down to help them stick together
Step 6
add the sage on the prosciutto and rub 1 teaspoon on the steak
Step 7
once veggies are cook place steak into the pan on high heat, prosciutto side down
Step 8
once steak is almost done you can cook the egg alongside it to your liking
Step 9
once cooked place steak and egg on top of your veg with spinach dressed with the hollandaise
