Instructions
Step 1
Peel potatoes and onions. Shred 1 onion with fine shred and 3 potatoes with medium shred. Repeat til done, separate batches
Step 2
Squeeze out excess liquid then mix in egg, 1/4 c flour, salt and pepper. Repeat for each batch
Step 3
Pour peanut oil into pan and set on medium high. Form latkes in hand and then place in pan, careful not to overcrowd. Flip as needed and every so often squeeze oil out of latkes (between 2 spatulas or against bottom of pan).
Step 4
Transfer to paper covered tray
