Instructions
Step 1
Add the basmati rice and 300ml [600ml] cold water to a pot with a lid and bring to the boil over a high heat
Step 2
Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked
Step 3
Once cooked, remove from the heat and keep covered until serving
Step 4
Whilst the rice is cooking, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Step 5
Once hot, add the meat-free mince and cook for 5-6 min or until browned and crisped
Step 6
While the mince is cooking, deseed the pepper[s] (scrape the seeds and pith out with a teaspoon) and slice into small, bite-sized pieces
Step 7
Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger
Step 8
Peel and finely chop (or grate) the garlic
Step 9
Once the meat-free mince has browned, add the sliced pepper to the pan and cook for 2-3 min until the pepper has started to soften
Step 10
Meanwhile, add the rice vinegar, soy sauce, sesame oil and chilli jam to a bowl
Step 11
Add 1 tsp [2 tsp] sugar and 1 tbsp [2 tbsp] cold water and give everything a good mix up – this is your sticky chilli sauce
Step 12
Once the pepper has started to soften, add the chopped ginger and garlic and cook for 1-2 min or until fragrant
Step 13
Once fragrant, add the sticky chilli sauce and cook for 2 min until everything is coated and sticky – this is your meat-free mince sticky chilli stir-fry
Step 14
Serve the meat-free mince sticky chilli stir-fry over the basmati rice
Step 15
Sprinkle over the sesame seeds
