Almond Ricotta Loaf (w/ Raspberry Jam)

I made this a while ago when I had some leftover ricotta and decided to experiment and use it in a single-serve loaf. It surprisingly came out really well, and the flavor combo of ricotta and almond was perfect! I paired the loaf with some homemade raspberry jam.

Step 1
Whisk to combine your ricotta, butter, almond extract, and sugar. Add your egg and whisk. Fold in your flour, baking powder, cinnamon, and salt. Lastly, fold in the crushed almonds. Transfer to a mini loaf pan (if using a regular pan, triple the recipe) and bake at 350f for 30min. Allow to cool down and enjoy with raspberry jam!
