Super simple, amazingly delicious, tomato or veggies with feta and pasta
Can be adapted to whatever flavors you like and have on hand.

Step 1
Leave tomatoes whole
Dice larger veggies of choice into similar size for even cooking times
Place on baking rack (line with foil for easy cleanup)
Dump spices and evoo over veggies and coat well
Make a space in center for feta block
Drizzle a dash of oil over feta
Place into a preheated 400° oven. (370° if convection)
Cook pasta of choice to doneness of choice
Cook about 40 min or until tomatoe pop and everything is cooked. Broil for a couple minutes if cheese hasn't browned yet
Dump everything into a bowl and mix well. Top with fresh basil or herbs of choice
