Vegetable soup with hamburger

This is a mashup of several different recipes. Minimal tomato. Fresh thyme is a must. Substitutions for homemade beef bone broth would be some consomme, beef bouillon or dark miso. The bone broth adds deep, rich flavor.

Ingredients

6 cbeef broth
12 ozbeef bone broth
1.5 poundhamburger
1shallot
chopped
⅓ conion
chopped
2 ribsCelery
1 ccarrots
chopped
1 cangreen beans
drained or fresh beans
2new potatoes
peeled and diced
½ cupcorn
fresh, frozen or canned
pepper
1 clovegarlic
peeled and smashed
1 Tbspred wine vinegar
bay leaf
green cabbage
Wedge, sliced thin
fresh parsley
chopped
Instructions
Step 1
In a large soup pot (8-10 qt), add the broths. Heat this while you do the other steps.
Step 2
In a large frying pan, brown the hamburger. Drain and add the meat to the soup pot.
Step 3
Drain the fat from the frying pan and add 1 tbsp of butter. Once it's melted, saute the shallot, onion, carrots, celery until softened and fragrant. Add all this to the soup pot.
Step 4
Add everything except the cabbage and parsley to the soup pot. Bring to a simmer and cook for 20 to 30 minutes.
Step 5
Add cabbage and parsley, cook a few more minutes until cabbage is cooked. Or put a lid on the pot and turn off the heat. Let everything sit while you rest a while.
Step 6
Remove the thyme sprigs and bay leaf before serving Serve with parmesan cheese (option). Nice with a grilled cheese sandwich.
