I could eat this toast for breakfast, lunch and dinner 😍
The crunchy toast with the cool burrata and the slightly warm roasted tomatoes is just so good. Add in that fresh garlic oil and some basil and it’s my idea of the most perfect flavour combo imaginable.

Instructions
Roast the tomatoes
Step 1
Place tomatoes in small roasting dish with 2 Tbsp extra virgin olive oil, 2 crushed garlic cloves and a bit of flaky sea salt + pepper. Roast at 165C/330F for about 15 mins. Tomatoes should be softened and starting to blister. Set aside.
Grill (or toast) the bread
Step 2
As your tomatoes are cooling slightly, brush your slice of sourdough bread with a little bit of the oil from the roasted tomatoes and grill over medium-high heat in a cast iron or non-stick pan until it’s toasted to your liking. You can of course use a toaster for this step if you wish to!
Assemble toast and enjoy!
Step 3
Spread the toast with the pesto, burrata cheese and roasted tomatoes. Use some of the garlicky roasting oil to drizzle over the top and finish with flaky sea salt, fresh cracked pepper and fresh basil leaves. Enjoy!
