Instructions

Step 1
Fry the onion in the heated oil until soft then stir in the curry powder ginger powder and cook for a further minute or so stir occasionally
Step 2
Add to the pan the banana vegetables and potatoes and cover with the stock add the coconut milk and almonds. Cover for around 15 minutes then no cover for 10 minutes Staring occasionally cook until the potatoes are tender
