Ingredients

1Pie pumpkin
skinned, seeded and chopped
1red pepper
1yellow pepper
2dried chili peppers
1 cancanned bamboo shoots
1can garbanzo beans
2cans coconut milk
1can tomato paste
2 Tbspred curry paste
3bay leaves
2 Tbspgarlic
2 Tbspginger
2 Tbspsoy sauce
1 Tbspfish sauce
2 Tbspmaple syrup
2 Tbspbrown sugar
2 Tbsphoney
2 Tbspchili powder
1 Tbspcinnamon
1 ½ cupred onion
3 Tbspcoconut oil
Instructions
Step 1
Chop onions, pumpkin, bell peppers
Step 2
Add coconut oil to pan until melted
Step 3
Add cinnamon and bay leaves to oil
Step 4
Add onions, pepper, garlic, ginger, tomato paste, curry paste, curry powder, chili powder stir until well coated, cook for 3 minutes
Step 5
Add pumpkin, soy sauce, fish sauce, bamboo shoots, garbanzo beans, stir until well coated
Step 6
Add coconut milk and sweeteners, stir until coconut milk is dissolved
Step 7
Cook covered for 15 minutes on med head to simmer
