Ingredients
4 servings
2 tbspsolive oil
5 rashersmiddle bacon
rindless, diced
1onion
finely chopped
1stalk celery
diced
1carrots
finely chopped
2zucchinis
finely diced
1potato
peeled and cubed
2cloves garlic
minced
2 tbspstomato paste
6 cupschicken stock
400gcan of diced tomato
salt
to taste
pepper
to taste
400gcan kidney beans
1 cupmacaroni
2 tbspsoregano
finely chopped
2 tbspsbasil
coarsely chopped
Instructions
Step 1
Heat oil in a large saucepan over high heat. Add bacon, onion, vegatables and garlic and saute for 5 mins or until onion has softened. Stir in tomato paste.
Step 2
Add stock, tomatoes and salt, bring to the boil, reduce heat to low, cover and simmer for 20 mins or until vegetables are tender.
Step 3
Stir in beans and pasta and simmer for 10 mins or until pasta is al dente. Stir in basil and oregano.
