RAGU

1 Tbspolive oil

2garlic cloves
finely chopped

1carrot
finely chopped

2sticks celery
finely chopped

1onion
finely chopped

140gdiced pancetta

500gpork mince

500gbeef mince

2tins chopped tomatoes

3 Tbsptomato puree

250mlred wine

1 litrebeef stock

2bay leaves

2 tspsugar
BESCIAMELLA
LASAGNE
Instructions
Ragu
Step 1
Heat olive oil in a large pan/pot, add onions, garlic, carrots, celery, cook over a low heat for about 10 mins until softened but not coloured.


Step 2
Add pancetta, cook for 3-5 mins until starting to brown.

Step 3
Mix in beef & pork, season well and cook on high heat until browned.
Step 4
Pour in wine, cook over high heat to burn off the alcohol and reduce.
Step 5
Add in tomato puree, mix through.
Step 6
Pour in stock, chopped tomatoes, season well and bring to the boil. Reduce heat, add rosemary & bay leaves.
Step 7
Simmer on low heat for 1.5-2 hours with low on, remove lid and simmer for 30 mins until thickened. Stir in sugar and season to taste.

BESCIAMELLA
Step 8
Add butter to a saucepan and melt over a low heat.
Step 9
Add flour and stir constantly over a low heat for 1 min to form a paste.
Step 10
Pour milk in stages constantly stirring to avoid any lumps, use hand whisk if needed.
Step 11
Once the sauce has started to thicken add the rest of the milk and cook for 3-5mins over a low heat stirring regularly.

Step 12
Remove from heat, add cheese, nutmeg and season well.
LASANGE

Pre-heat oven to 180C

Step 14
To assemble spoon a small amount of ragu on the base of the baking dish, top with an even layer of lasagne sheets. Spoon ragu on top, followed by besciamella sauce & a sprinkle of mozzarella.

Step 15
Repeat the layers of pasta, ragu, besciamella, mozzarella until everything is used up, make sure to keep some besciamella for the top layer.
Step 16
Cover the top layer with besciamella, mozzarella & parmesan.
Step 17
Bake in the oven for 30-40mins until bubbling & golden.

Step 18
Leave to set for 20-30 mins & serve.
