Tzatziki
Instructions
Step 1
Roughly chop tomato and set aside.
Step 2
Roughly chop onion, and add in chopped parsley, and set aside.
Step 3
Combine tzatziki ingredients and set aside.
Step 4
Fry Gyro slices in single layer batches on a hot griddle with silicone tongs until edges (and a bit more) are crispy on both sides.
Step 5
Place cooked slices in nearby slow cooker set to low.
Step 6
Once you have set your next batch to frying, douse meat liberally with olive oil, lemon juice, lots of garlic, salt, pepper, and oregano. Toss with tongs to coat all meat. Slices will fall apart some. This is good.
Step 7
Repeat frying, dousing, and tossing until all meat is in cooker and happy.
Step 8
Warm pita bread (or make your pitas) while meat stews for a few minutes.
Step 9
Serve a heap of meat on your pita, top with veggies and tzatziki, and enjoy!
