Over the Rainbow Mandarin Dinner Salad

We get every colour of the rainbow into this bright crisp salad (or just about anyway).
Use fresh oranges if you have them on hand or opt for the well drained canned variety - choose one packed in their own juice with no added sugar or syrup if possible, for taste and good health.
Add 2 cups of fried firm tofu, cooked shrimp of chicken if desired.

Ingredients
4 servings
4 cupsnapa cabbage
finely sliced, or romaine lettuce, chopped
2 cupsbaby kale
1 cupred cabbage
finely sliced
1carrot
grated or julienned
1 cupmandarin orange
segments, Plus 1 orange for dressing
1red bell pepper
thinly sliced
1english cucumber
remove seeds by cutting in half and scraping with a spoon Slice
½ cupsliced almonds
1 cupchow mein noodles
the crispy snacking kind
For the Dressing
Instructions
Step 1
Combine dressing ingredients in a bullet blender or whisk vigorously by hand. Make the dressing first (or ahead) so it has time to rest/mature while you prepare the salad.
Step 2
Combine salad ingredients.
Step 3
If adding tofu, chicken or shrimp, quickly saute in a little vegetable and sesame oil
Step 4
Toss everything together and enjoy
