Mum's Xmas Ham Recipe

Notes on the glaze.
For 2.75 joint use:
2 tablespoons Dijon or English mustard
2 tablespoons Demerara sugar
Whole cloves to decorate
Remove skin and with sharp knife score the fat with parallel lines in opposite directions to create a diamond pattern, then press a clove into each diamond point. Roast for for about 25 mins.

For the glaze

1. Dot the ham with the cloves

2. Put all vegetables in a pot large enough to be able to cover the ham with water
Step 3
3. Cover with water and bring to simmering point - do not let water boil

4. Then allow 25 mins per 500 plus 20 mins, keeping the water barely simmering

5. Allow to cool in the water

If adding a glaze:
Miss out the plus20 mins. While the ham is still warm cover dry English mustard powder and Demerara sugar. Using a sharp knife score the skin in a lattice pattern and bake for 20 mins until slightly caramelised. Probably worth cutting the cooking time by about 10 mins as well.
