Atayef is a must during the month of Ramadan. it’s a delicious Middle Eastern dessert that is filled with nuts or cheese, I filled mine with walnuts and pistachios and I Fried them until golden, you can definitely bake or air fry them then dip them in simple syrup. This batter will make you around 25 to 28 Atayef.
——Ingredients——
-2 cups flour
-1/2 cup semolina (سميد ناعم)
-1 tablespoon sugar
-1 teaspoon baking powder
-1/2 teaspoon yeast
-2 cups warm water (microwave for 1 minute)
-1 cup warm milk (microwave for 1 minute)
———Mix everything ⬆️together cover it with plastic wrap and let it rest for 20 minutes

-1 cup crushed walnuts
-1 tablespoon sugar
-1 teaspoon cinnamon

——pistachio filling——
-1 cup of crushed pistachios

-2 cups of oil for frying
