Hummus with Awarma Pies (فطاير بحمص)

This recipe is from the Lebanese heritage, and Awarma is one of the most important types of the traditional Lebanese supplies. It is prepared from melted Lamb fat and fried meat, then it is salted well to be preserved for a long time in jars.

Instructions

To Prepare the dough

Step 1
Mix the dry ingredients together then add water gradually according to our needs and knead well.
Step 2
Cover the dough with a towel in warm place and let it rest for an hour.

To Prepare the filling

Step 3
Soak chick peas in cold water for at least 4 hrs.
Step 4
Strain and wash presoaked chick peas, place in a food processor and chop it for a minute or two, and leave the chickpeas aside.
Step 5
Cut the onion into small pieces, sauté them for 3 minutes with a little vegetable oil.
Step 6
Add the Awarma and stir it with onion until the fat melts, then add the ground chickpeas and start stirring until the chickpeas become tender (approx 10- 15 minutes)
Step 7
Add the salt and spices and stir, Leave the filling for some time (5 to 10 minutes) on low heat, stirring constantly.

The Method

Step 8
When the filling is done, on a clean surface, roll out the dough and cut into 8 to 10 cm round shapes pieces.
Step 9
We put a little filling in each piece and then fold it into half moon shape and seal the edges.
Step 10
Fry the pies in deep vegetable oil until golden brown, remove it to a kitchen towel.
Step 11
Serve hot or room temperature along other appetizers and salads.
