Instructions

Step 1
In a medium saucepan, bring the broth to a simmer over low heat.

In a separate large saucepan, heat the olive oil and butter over medium heat. Once hot, add the diced onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant.

Add the Arborio rice to the onion and garlic mixture and stir until the rice is coated in the oil and butter. Continue stirring for about 2-3 minutes until the rice becomes slightly translucent.
Step 4
Add the white wine to the rice mixture and stir continuously until it is absorbed.
Step 5
Add a ladleful of the simmering broth to the rice mixture and stir continuously until it is absorbed. Repeat this process, one ladleful at a time, until the rice is tender and creamy, about 20-25 minutes.
Step 6
While the risotto is cooking, season the shrimp with salt, pepper, and Hop Barons BBQ rub & seasoning.
Step 7
In a separate pan, heat a tablespoon of olive oil over medium-high heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes on each side until they are pink and cooked through.
Step 8
Once the risotto is done, remove it from the heat and stir in the grated Parmesan cheese until it is melted and fully incorporated.
Step 9
To serve, place a scoop of the Parmesan risotto onto a plate and top it with a few shrimp. Garnish with additional grated Parmesan cheese and Hop Barons BBQ rub & seasoning, if desired.
