Clean, diced and boil potatoes. Saute celery, onion, garlic, and carrots in butter. Mash cooked potatoes lightly, add vegetables. Thicken with flour and water. Add cheeses, parsley, salt, pepper, hot sauce, and bouillon cubes. Simmer until flavors blend.
