Bengali Spiced Eggplant Spread

This Bengali roasted eggplant dip is what we call “Bhotha” or “Bhortha”. Bengalis are known to make many types and varieties of mashed foods, but this begun bhotha is a roasted eggplant and tomato spread with roasted chilis and warm spices.

Instructions

Step 1
Preheat the oven to 400°F / 200°C.
Step 2
Add the eggplant, tomatoes, and green chilies on the baking tray. (Leave the garlic on the side)
Step 3
Roast all the vegetables for 35 minutes til soft.
Step 4
After 20 minutes of baking, add the garlic cloves.
Step 5
Let it cool for about 5 minutes and add the dried chili pepper into the bowl.
Step 6
Mash all the vegetables together.
Step 7
Sprinkle on some salt & some pepper.
Step 8
Add the onions and cilantro.
Step 9
Drizzle in the mustard oil.
Step 10
Optional: add the cumin and red chili powder. Season to taste.
