Instructions

Step 1
Simply boil the eggs for 8 minutes and roughly chop 1.5 of them (saving half for decorating the top) and mix with 1 tbsp yoghurt, salt and pepper, chopped fresh basil, diced avocado, the little lemon zest and lemon juice. Mix to combine.
Step 2
Spread onto crisp breads and top with a scattering of chives, extra basil and two egg quarters.
