Ricky’s Mexican Rice

Instructions
Step 1
Pour oil into a saucepan until it just covers the bottom of the pan. Into the same saucepan, add enough rice to evenly cover the bottom.
Step 2
Toast the rice and oil until the rice takes on a dark golden color.
Step 3
Cover the toasted rice with chicken broth and allow to simmer down. During this process, add a healthy spoonful of minced garlic, pepper to taste, and enough tomato bouillon powder to turn the rice a dark orange/red color (see photo).
Step 4
After the chicken broth has cooked down, add enough water to completely cover the rice. Allow to cook down only stirring occasionally.
Step 5
Once the water has cooked down, taste the rice to see if it is cooked through. If needed, repeat step 4 until completely cooked.
