Cauliflower Curry

This delicious winter meal can make anybody warm. You can serve it with jasmine rice, chilli pepper, sesame seeds and some coriander on top if you like. I love to serve this with hint of lime. Bon appetite :)

Instructions

Step 1
Cut the cauliflower to small florets, pumpkin to 1cm cubes and onion to tiny pieces.
Step 2
Add coconut oil to a deeper pan. Add onion, cauliflower and hokkaido pumpkin, let it bake 3-4 minutes on middle heat.
Step 3
Afterwards add curry and cumin, let it simmer for another 30 sec.
Step 4
Add 300ml vegetable stock (or just water with bouillon if you have no stock) & coconut milk from a tin, add washed chickpeas from a can, salt, pepper and mix it well. Close it with a lid and let is cook/simmer on a small heat for about 20 - 22 minuts.
