Turkish Lamb Wraps

Instructions

Step 1
Make the lamb filling: Heat a large pan over medium heat and then add oil. Once oil is hot add lamb and onion and cook for 5 minutes, until lightly browned. Add the garlic and salt and continue browning until the lamb releases all it’s moisture and begins to brown, about 5-7 more minutes.

Step 2
Add the cumin seeds, coriander, sumac, cinnamon, parsley, optional chilli flakes and saute 2 more minutes. Add the tomato paste and water, incorporating it into the lamb. Stir in the salt.

Step 3
Assemble the wrap: Take one wrap, top with 30 gms of yoghurt, 1/4 portion of the lamb filling and 1/4 portion of salad tomatoes, cucumbers, parsley, and spinach and tzatziki. Roll them up and cut them in half. Store the rest of the salad and lamb filling in an air tight container in the fridge for the weeks lunches.
