Granola
Yield: 9 cups Ingredients:
3 cups Rolled whole grain oats
1 1/2 cups cashews
1 cup sunflower seeds
1 cup coconut chips
3/4 cup dried cherries
3/4 cup dried pineapple
3/4 cup dried blueberries
3/4 cup maple syrup
1/2 cup extra virgin olive oil
1/2 cup light brown sugar, packed
1 tsp kosher salt
1/2 tsp ground cinnamon
2 egg whites, whipped frothy
Instructions
Step 1
1. Preheat oven to 300 degrees. In a larg bowl, add oats, nuts, seeds, & coconut.
Step 2
2. In medium bowl mix maple syrup, olive oil, brown sugar, salt and cinnamon.
Step 3
3. In a small bowl whip 2 egg whites frothy.
Step 4
4.Combine& mix all 3 bowls of ingredients.
Step 5
5. Spread mixture on a rimmed baking sheet in an even layer and bake for 45 minutes, stiring every 10 minutes, until golden brown and well toasted.
Step 6
6. Remove from oven and let it sit over night to make clusters.
Step 7
7. The next morning, package and store in an airtight container.
