Pappardelle pasta with mushrooms
Perfect for a Sunday dinner.
All you need is a nice Italian bread, a salad and you have a quick delicious dinner

Ingredients

10 ozmushrooms
sliced
4 Tbsunsalted butter
2 Tbsextra virgin olive oil
1shallot
chopped
1 tspsalt
½ tspblack cracked pepper
½ cuppasta water
1 poundpasta
1 cupchicken stock
¼ cupparsley
chopped
Parmigiano Reggiano
fresh grated
1 potwater

3 add the and sauté on low heat for 5 minutes or until they are tender

Instructions
Step 1
1-get a pot of water going for the pasta
Step 2
2-sauté the shallot in the butter and olive oil till translucent about 2 minutes
Step 3
3-add the mushrooms, salt, pepper and sauté on low heat for 5 minutes or until they are tender
Step 4
4-add the stock bring to a boil then lower the heat to low and simmer this for 8 minutes
Step 5
5-while your doing step 4 get the pasta cooked in salted water
Step 6
6-remove one cup of pasta water then strain the pasta put it back in the pot you cooked the pasta in and add the mushroom sauce to the pasta with 1/4 cup of pasta water
Step 7
7-toss the pasta in the sauce on low heat for 2 minutes to fully infuse the pasta if needed add a little more pasta water
Step 8
8-remove from the heat add the parsley and 1/4 cup of Parmesan and toss and serve with more cheese
