Ingredients

Gumbo
1 cuppeanut oil
or canola
2 cupscake flour
2 cupsonions
diced
2 cupscelery
diced
2 cupsgreen bell pepper
2 cupsokra
thinly sliced
salt
1 tbgarlic
chopped
2 tbgumbo file
½ tspcayenne pepper
1 tspblack pepper
½ tspdried thyme
2bay leaves
28 ozwhole tomatoes
can, chopped
2 qtchicken stock
1 lbandouille sausage
1/4" pieces
1.5 lbchicken
cooked, or turkey
Rice
Instructions
Step 1
Cut and chop all ingredients
Step 2
Combine oil and flour over high heat until roux is the color of caramel or milk chocolate.
Step 3
Add onions, celery, bell peppers, okra, and a few tablespoons salt. On medium-high cook for 3-5 minutes.
Step 4
Add garlic, gumbo file, cayenne, black pepper, thyme and bay leaves. Stir and cook 2 more minutes.
Step 5
Add tomatoes and chicken stock. Simmer for 45 minutes.
Step 6
Add the sausage and cooked chicken during last 10 minutes of simmer.
Step 7
*remove bay leaves before serving
Make the Rice
Step 8
Melt butter in heavy saucepan over medium heat.
Step 9
Add rice and cook until opaque
Step 10
Add water and salt and stir to combine
Step 11
When water simmers, cover and reduce to low.
Step 12
Check at 15 minutes.
