Sesame Soy Fish with Asparagus and Sweet Potato

Instructions
Step 1
Preheat the oven to 200°C.
Step 2
Whisk the sesame oil, soy sauce, ginger and honey in a bowl until well combined.
Step 3
Cut shallow slits into the fish fillets. Brush half the sesame mixture over both sides of the fish. Place the sweet potato in a single layer on a large oven tray. Lay the fish over the sweet potato on one side. Place the asparagus on the other side. Drizzle with remaining marinade. Season with salt and pepper.
Step 4
Bake for 20 minutes or until fish is cooked through and veggies are tender.
Step 5
TO SERVE: Sprinkle with cress to garnish, if you like (this is optional). We used a purple-coloured cress in our recipe to add a little colour.
