Step 1
Add the nuts to a food processor and pulse until you get a crumbly dried cheese texture. Add the lemon juice, olive brine or white vinegar, nutritional yeast and salt, to taste. Taste for seasoning and add more salt as needed. Add the mixture to a bowl lined with cheesecloth. Wrap the cheese tightly in a cheesecloth to remove excess liquid by squeezing the cheese. Cover and refrigerate for 24 hours. Remove the cheesecloth, crumble and serve
