Step 1
Pierce squash all over with a fork. On plate, microwave squash on high 14 minutes.
Step 2
Cut squash in half lengthwise; discard seeds. With fork, scrape squash and place strands in medium bowl.
Step 3
Mix in olives, cheese, parsley, olive oil and vinegar.
