100gOnions
10ggarlic cloves
7gRas-el-hanout
1 tspfennel seeds
1 tspCumin seeds
1 tspturmeric powder
200gcarrots
200gSweet potatoes
200gTurnips
250gChickpeas
400gTomato tin
400mlWater
To finish
Instructions
Step 1
Assemble all ingredients
Step 2
Chop the onions and garlic finely.
Step 3
Pre-cook the chickpeas or used pre-cooked.
Step 4
Cut all the vegetables into medium sized dice.
Step 5
Chop all the herbs
Step 6
Cut the dried fruits in half
Step 7
Cook out the onion, garlic in 100ml of water with a pinch of salt for 5 minutes.
Step 8
Add all the spices and cook out gently for 3 minutes. add some more water if it's getting dry.
Step 9
Add all the vegetables, tinned tomato and water.
Step 10
Cook out on a gentle heat for 20 minutes.
Step 11
About 5 minutes before serving, add the dried fruits (reserve some to sprinkle on top)
Step 12
Stir in the herbs just before serving.
Step 13
Garnish with chopped roasted almonds and dried fruits
Step 14
Served with some steamed cous-cous
