Instructions
Step 1
Preheat oven to 375°F
OvenPreheat
Step 2
Spray 8x8 baking dish with oil, then line it with parchment paper
Step 3
Add a few inches of water to a pot and set on the stove on low. Once the water is steaming set up a double boiler, making sure the bowl does not touch the water.
Step 4
Add 10 tablespoons butter, cocoa powder, sugar, and brown sugar to the double boiler bowl and mix until the butter melts and everything is combined. It will be a chocolate gritty paste similar to babka filling. Let it sit for a few minutes to cool down to a warm but not hot temperature.
Step 5
Once the chocolate mixture has cooled, add one egg at a time to the mix beating until just combined. Add the vanilla with the second egg
Step 6
Melt 2 tablespoons butter and 1/3 cup chocolate chips in a bowl, mixing until shiny. Set aside
Step 7
Sift flour onto chocolate egg mixture. Gently fold the flour into the batter with a spatula. Alternate adding the melted chocolate between folds. Add 1/3 cup chocolate chips to the batter just before it all comes together. This is a thick rich brownie so the batter will pull away from the side of the bowl but is still a spreadable consistency.
Step 8
Pour into parchment lined baking dish and top with remaining chocolate chips. Let it bake for 20-25 minutes.
Step 9
Allow to sit for a few minutes before removing from the pan or cutting. Sift powdered sugar on top once cool if desired.
