Instructions

Step 1
Place 450ml of Luke warm water in a bowl, sprinkle the yeast and sugar and rest for 5-10 minutes until bubbly
Step 2
In a separate bowl mix the remaining 50ml of water with the salt and set aside
Step 3
In a large bowl mix the yeast mixture with olive oil and slowly incorporate the flour
Step 4
Add salt mixture towards the end and continue to mix until smooth
Step 5
If the dough is too sticky add a little flour, too dry add a little water
Step 6
Tip out onto work-surface and knead until smooth and internal temperature is between 24 - 27 deg C
Step 7
Transfer to clean bowl and prove for 2-3 hours until doubled in size. Prove between 24 - 27 deg C
Step 8
Transfer to lightly floured surface and divide to 180 - 200g pieces.
Step 9
Make a dough ball
Step 10
Rest at room temperature to prove for another 3 hours. Use within 6 hours
