Squid Steaks with Asian dipping sauce

Squid steaks are just that. Steaky squid! I love them because of how versatile they are. Hot, cold, chilled, grilled. Such a clean protein and fun to imagine into dishes. This time we go straight forward with a fry preperation.

Step 1
Lightly score one side of each squid steak then cut into strips. Season flour with salt and pepper. Toss the strips in and give them a good shake. Dredge the strips in egg wash, remove and batter with panko. Bring cooking oil to 325-350 degrees. ( i used avocado, high burning temp and much better for you than most other frying oils) Fry strips in batches. They cook quickly. Turn once in the oil, look for golden brown strips that are floating. (don't over cook) Around 3 minutes. In a small mixing bowl combine 1 Tbsp sesame oil, 1 Tbsp hoisin sauce, 1 Tbsp dark soy (or regular) and siracha to taste. Mix well. Mince fresno and jalepeno peppers for garnish. Platter strips, hit them with some fresh squeezed lime, garnish with pepper blend, dip and enjoy!
