Instructions
Step 1
Half fill a large saucepan with water and bring to the boil.
Step 2
Add the spaghetti, return to the boil and cook for 10–12 minutes, or until tender.
Step 3
Add the spiralized courgette and stir together quickly, then immediately strain through a colander, and run very briefly under a cold tap.
Step 4
Meanwhile, place the pine nuts and lardons in a nonstick saucepan with half the oil and fry over a medium heat for 2-3 minutes, stirring regularly until lightly browned.
Step 5
Tip out on to a plate and return the pan to the heat.
Step 6
Add the remaining oil and spinach and cook over a medium heat for 1-2

minutes, or until the spinach is soft, stirring regularly.
Step 8
Crumble two thirds of the feta over the top, season and cook until the feta melts, making a creamy coating for the spinach.
Step 9
Return the spaghetti and courgetti to their saucepan, add the spinach and feta sauce and, using two forks, toss together well over a medium heat for 1- 2 minutes.
Step 10
Divide between two shallow bowls, crumble the remaining feta over the top and sprinkle with the pancetta and pine nuts.

COOK'S TIPS If not eating pork, skip the pancetta and reduce the total calories by 60cals per portion

* A spiralizer will help to cut courgettes, and other vegetables, into long, thin, spaghetti-like strips.

If you don't have one, buy ready-made courgetti.
Step 14
you could also peel the courgette into long strips using a potato peeler.
Step 15
Increase the amount of wholewheat spaghetti.
