Spicy Sesame Zoodles

This dinner is packed with flavor and it's so easy to whip up on a busy night! Zucchini is full of antioxidants and anti-inflammatory phytonutrients, and a good swap for pasta.

Ingredients

sauce
½ cupalmond butter
¼ cupsesame oil
⅓ cuplow-sodium tamari
¼ cuprice vinegar
2 Tbspchili paste
like sambal oelek
1 Tbsphoney
1clove garlic
minced
1 tspginger
fresh minced
ZOODLES
1 tspolive oil
4zucchini
spiralized or about a 10 oz package of prepared spiralized zoodles
salt
to taste
pepper
to taste
green onions
Optional gar
sesame seeds
Instructions
Step 1
1. In a medium bowl, add all ingredients for the sauce and stir until well combined. Set aside.
Step 2
2. Coat a medium sauté pan with olive oil over medium heat. Add zoodles and season with salt and pepper. Cook zoodles for about 2 minutes, stirring.
Step 3
3. Add sauce to zoodles and stir to combine. Cook until sauce is warm and remove from heat.
Step 4
4. Portion into bowls. Garnish with green onions and sesame seeds. Enjoy!
