Ingredients

Teriyaki Sauce
60mlsoy sauce
40mlmirin
40mlsake
1 ½ Tbspsugar
1 knobginger
finely grated
2cloves garlic
minced
1 Tbspcorn starch
Noodle Bowl
Instructions
Step 1
Combine teriyaki sauce ingredients and set aside.
Step 2
Toast sesame seeds if not already toasted.
Step 3
Remove edamame beans from their pods and set aside.
Step 4
Fry pieces of tofu in 1 tbsp of oil until a little more caramelised. Remove from the heat, and place on an oven-safe plate, putting it in a warmer or in the oven on its lowest temperature setting until serving.
Step 5
Cook soba noodles for 1 minute less than packet instructions, drain and rinse in cold water. Loosen with more cold water when they are needed.
Step 6
Stir fry in a large wok, heating the vegetable oil and then adding in this order: broccoli, carrot, edamame, spring onion. Finally, add the sauce, and the noodles. Cook for a further 1-2 minutes, only enough for the sauce to thicken around the noodles. Turn off the heat, and portion in bowls.
Step 7
Serve topped with tofu, sesame oil drizzled on the noodles, and scattered sesame seeds.
