Chicken Fricassee or Fricase de Pollo is a staple in our Cuban household. This is our family recipe. This recipe serves 6-8 people.

Ingredients
6 servings
8skinless bone in chicken thighs
0.5yellow onion
diced
0.25green bell pepper
diced
4 clovesgarlic
minced
1 ½ tspcumin
2 tspground coriander
1 tspdried oregano
2bay leaves
1 ½ tsppaprika
1 jarmanzanilla olives
sliced, drained
8 ozcan tomato sauce
½ cupsour orange juice
¾ cupSpanish cooking wine
6red potatoes
medium, peeled and diced
5 cupswater
Instructions
Step 1
Add green pepper, onion, and garlic to a large pot with the chicken thighs to brown everything together
Step 2
Once the chicken is browned, add all the seasonings to the pot
Step 3
Add olives, tomato sauce, sour orange, cooking wine, and potatoes to the pot
Step 4
Add 5-6 cups of water to cover everything
Step 5
Bring to a boil and then lower to simmer, cook for an hour or until the potatoes are cooked through
Step 6
Serve over white rice
