Instructions

Step 1
In a large pan add the onion with some oil, the quinoa and thyme, and heat until slightly browned.
Step 2
Add the chicken broth and chicken and cook for a few minutes until warmed through.
Step 3
Add the walnuts and celery and cook for a few minutes.
Step 4
Remove from heat.
Step 5
On a serving plate, layer the arugula, then your cooked mix and top with the red grapes.
