Vegan BBQ pulled pork taquitos are made from young jackfruit in water (not brine). this can be made into taquitos or burritos. -When shredding young jackfruit in water, break down all parts of the fruit. You can use the pods if you break them down with your fingers (or dispose of them). You also need to break down the cores (or dispose of them). -Preferred BBQ sauce is Kinders Cali Gold. -6 inch tortillas optional, you could also use bigger ones and make burritos, adjust time accordingly

Instructions

Step 1
preheat oven to 400 degrees. Rinse, drain, and dry jackfruit (see description for shredding). Mix spices and add to the bowl of jackfruit and coat evenly, let rest.
Step 2
Heat 2 tbsp of oil in a pan and add onion, cook for 6-8 minutes stirring frequently on medium-high until translucent (do not let it burn).
Step 3
Add pineapple to the pan with onion, cook for another 6-8 minutes stirring frequently until carmelized. Season with salt and pepper to test. Set aside in a bowl.
Step 4
In the same pan, heat 2 tbsp of oil and add the jackfruit mixture. Sautée for 3-4 minutes, then add BBQ sauce and water. simmer on low for 15-20 minutes until jackfruit darkens.
Step 5
Once cooked, add jackfruit to the onion/pineapple mixture. Add vegan cheese, cilantro, and salt and pepper to taste, mixing well.
Step 6
Prepare baking sheet with foil, spray with oil. Place about 1/4 cup of filling in the tortilla towards one side and roll. Placing seam side down on oiled pan.
Step 7
Lightly spray tops of taquitos, cook for 7 minutes at 400 degrees. Turn taquitos over and cook for 7-8 more minutes until crispy.
