8medjool dates
pitted

1 cupwater
boiling

1 ¼ cupsunsweetened almond milk

1 cupraw cashews
soaked, drained, and rinsed

1banana
ripe, peeled

¼ cuprolled oats
gluten-free

1 teaspoonvanilla extract

½ teaspoonground cinnamon
plus more for topping if desired

¼ teaspoonground nutmeg

sea salt
finely ground

Instructions
Step 1
1. Put the dates in a medium-size heatproof bowl or 2-cup liquid measuring cup and cover with the boiling water. Let sit until swollen and softened, about 10 minutes, then drain and rinse.
Step 2
2. Put the soaked dates and the rest of the ingredients in a high-powered blender and blend until smooth and creamy, 2 to 3 minutes.
Step 3
3. To serve, pour the shake into two 16-ounce glasses and top with coconut whipped cream, a pinch of cinnamon, and chopped chocolate, if desired.
