FODMAP friendly, non dairy, easy butter chicken with no preparation ahead. I made this recipe by experimenting with a few others and refining until it suited my taste (and my daughter's). The result is a tasty butter chicken with a lot of flavour and a lot of sauce.

Instructions

Step 1
Dice chicken thighs into large pieces. Melt butter in a large pan and add chicken. Cook on high heat, stirring occasionally until lightly browned.
Step 2
Add garlic oil and spices to pan. Stir through until chicken is coated evenly and spices are aromatic.
Step 3
Add passata and sugar. Bring to boil, then cover and simmer for 15 minutes.
Step 4
Uncover and add coconut milk. Stir through and bring back to boil. Simmer, uncovered for 30-40 minutes or until sauce is reduced and dark in colour.
Step 5
Serve with rice and/or naan bread. Spoon over a little coconut yoghurt to taste.
