Sweet & Sour Turkey with Egg-Fried Rice

Instructions

Step 1
In a large bowl, toss the turkey with cornflour, a pinch of sea salt. and black pepper. Heat a large wok or frying pan with 2 tsp oil on medium-high heat. Cook the turkey for 7 mins, turning occasionally, until golden.
Step 2
Meanwhile, roughly dice the pepper and onion into 4cm squares. Cut the sugar snaps into bite-sized pieces. Thinly slice the spring onions. Add the onion, pepper and sugar snaps to the pan. Cook for 4 mins, until softening.
Step 3
Make the sauce. In a small bowl, combine tamari, tomato puree, maple syrup, vinegar and 2 tbsp water. Add the sauce to the pan and cook for 2-3 mins, until the sauce thickens and the turkey is cooked. Check your turkey is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear. Cook for longer if necessary.
Step 4
Heat another frying pan with 1 tsp oil on medium heat. Add the spring onions, rice and 2 tbsp water, then cook for 3 mins, until piping hot.
Step 5
Push the rice to the edges of the pan. Add 1 tsp oil to the centre of the pan and crack in the egg. Break the yolk then leave to cook for 1-2 mins, until firm. Once cooked, break up the egg and mix it into the rice. Season with sea salt and black pepper.
Step 6
Serve the egg-fried rice in bowls with the sweet and sour turkey.
