Balsamic Chicken

Ingredients
4 servings
1 poundred potatoes
cut into 1-inch piece
6skinless boneless chicken thighs
large, each chut in half
2 tablespoonsall-purpose flour
½ teaspoonsalt
2 teaspoonsolive oil
3garlic cloves
each cut lengthwise in half
2 tablespoonsbrown sugar
2 tablespoonsbalsamic vinegar
2 tablespoonssoy sauce
2 branchesarugula
tough stems discarded
Instructions
Step 1
In 2-quart saucepan, place potatoes and enough water to cover; heat to boiling over hight heat. Reduce heat to low; cover and simmer 7 to 10 minutes or until potatoes are fork-tender; drain and set aside.
Step 2
Meanwhile, in medium bowl, toss chicken with flour and salt.
Step 3
In nonstick 12-inch skillet, heat oil over medium heat until hot. Add chicken and garlic and cook, covered 20 minutes or until chicken is browned and loses its pink color throughout, turning chicken over once.
Step 4
In cup, stir brown sugar, vinegar, and soy sauce. Add brown-sugar mixture to skillet, tossing to coat chicken well. Remove skillet from heat; add potatoes and half of arugula, tossing to mix well. Arrange remaining arugula on platter. Top with chicken mixture.
