Instructions

Sushi Rice

Step 1
Wash sushi rice thoroughly and add water. Turn the stove on and bring it to boil once, after that, turn heat low and let it simmer for 30mins, mixing rice at regular intervals. Rice should be fully cooked through and sticky.
Step 2
Once the water dries and rice becomes fluffy, turn the heat off.
Step 3
Add vinegar, sugar, salt, sesame seeds and chaat masala and mix everything
Step 4
Spread the rice thinly on a baking tray. Cover with a damp tea towel and let it cool down for a minimum of 30mins.

Fried Chicken

Step 5
Coat some chicken in your preferred fry mix and egg. I use the tropics hot and spicy fry mix. You can also use breaded chicken strips
Step 6
Fry the chicken till it is cooked through. Set aside to cool and then cut into smaller pieces

Pan fried Salmon

Step 7
Sprinkle salt and pepper on a piece of salmon
Step 8
Add some oil and butter to a pan and once it is bubbling, place the salmon, skin side down and cool for 4mins, then flip and cook on the other side for 2 more minutes
Step 9
Take it out of the pan, let it cool and then cut into smaller pieces

Assembly

Lay one sheet of seaweed paper flat
Step 11
Add about 3 heaped tbsp of sushi rice and flatten then over the seaweed paper. leaving about 1 inch empty from the top
Step 12
For chicken sushi, add sliced fried chicken, red peppers, chopped green onions, mayo and hot sauce. I used samyang sauce.
Step 13
For salmon sushi, add sliced salmon, cucumber and spicy mayo. I used algerian sauce.
Step 14
Using a sushi mat, tightly roll the sushi bit by bit, ensuring it keeps its shape
Step 15
Cut the scraps from sides and slice the sushi in about 1cm thickness.
Step 16
Serve with soy sauce. I used blue dragon medium soy sauce.
