You’ll need to make a Barbacoa for this recipe or snag some from a local market! The soft cabbage mixture with juicy barbacoa and a slightly crispy tortilla is a great healthy combo for an easy lunch or make several for a fun family dinner! Add or substitute your favorite cheese or add other green like spinach or kale to the skillet for your own twist.

Step 1
Preheat oven to 400*F. Add olive oil to a skillet over medium heat and fry cabbage green onion and garlic. Dust with salt and chili powder and cook until soft.
Step 2
Brush the bottom side of a flour tortilla with olive oil and place on a baking sheet oil side down. Layer cheese, barbacoa, and cabbage mixture on the tortilla. Lay the second tortilla on top and brush with olive oil and dust with salt. Bake for 10 minutes or until tortillas a browned around the edges and slightly crispy.
