Instructions

Step 1
Warm the oil up and then add the onion, garlic, mushrooms and bacon until the onion is translucent
Step 2
Add the pepperoni, pepper and spinach to the pan, stir and cook for a minute
Step 3
Add the chopped tomatoes to the pan, stir and bring to the boil
Step 4
Add the following ingredients and bring to a simmer for five minutes, allowing the flavours to cook
Balsamic VinegarBalsamic Vinegar3 Tbsp

Tomato PestoTomato Pesto2 Tbsp
oreganooregano2 Tbsp
basilbasil2 Tbsp
saltsalt1 tsp
pepperpepper½ tsp
Step 5
Add the chicken breasts to the mixture and then transfer to an oven friendly dish and cook for 25 minutes at 180
Step 6
Whilst the casserole is cooking start making the garlic dough dumplings by mixing the Greek yoghurt, milk and lemon juice.
Step 7
Sieve the self raising flour and baking powder and create a well in the mixture, pouring the yoghurt mix into this well. Fold this mixture together
Step 8
When a dough is created, quickly knead it (don’t over do it) and then chop into 8 pieces.
Step 9
With each piece roll to create a ball shape and then squish to add some grated cheese into the middle, before rolling back into a ball
Step 10
Mix some melted butter with diced garlic and parsley and coat the balls in this mixture
Step 11
When the casserole is cooked remove from the oven and pull the chicken breasts with forks. Add the garlic butter coated dough balls on top of the casserole and put back into the oven for 15 minutes
Step 12
Add some mozzarella cheese and a few slices of pepperoni and cook for another ten minutes. Then serve
