Ingredients

1onion
large, chopped
2 tablespoonsolive oil
1 cupfresh corn
stripped straight from 3 ears of corn
1red pepper
large, diced
1 x 15 ozblack beans
can, drained and rinsed
1 ½ cupsbrown rice
cooked
½ cupfresh cilantro
½ cupfresh salsa
1 tablespoontaco seasoning
¼ tspsalt
to taste
3 cupsromaine lettuce
shredded
1avocado
sliced
1 x 8 ozcheese
mexi-cheese blend
2 cupstortilla chips
crumbled
Instructions
Step 1
1.Heat oil in a large pan.
Step 2
2.Add corn, red pepper and onion, stirring until the onion begins to brown (approx 5 min).
Step 3
3. Add to above mixture the rice, beans, taco seasoning 1/4 cup of cilantro and salt to taste.
Step 4
4.Let bean and rice mixture cool to room temperature.
Step 5
5.Combine remaining cilantro and fresh salsa.
Step 6
6.Combine lettuce with rice/bean mixture, salsa and 3/4 cup of cheese.
Step 7
7.Top with crumbles tortilla and remaining cheese and avocado.
Step 8
8.Sprinkle with fresh lime juice
